Roasted 3.0 is the latest evolution of Guiben Honey, one of our favourite coffees to explore since welcoming our Stronghold S9X to the workshop in Spring 2025. It's a chance to taste what a different roast profile can bring out in an already exceptional coffee, carefully grown and processed by Farm Manager TianCai.
⚠ WE'RE RELEASING JUST 20 BAGS IN THIS FIRST RUN.
For more than a year, our Head Roaster, Beau, has been experimenting with different coffees and roasting approaches alongside our regular production to better understand what the Stronghold S9X can do. Recently, Guiben was next in line. We tasted it on the cupping table and loved where it landed.
Expect a light and juicy coffee with sweet notes of honey mango, fresh white pineapple and a clean white tea finish.
THE IDEA BEHIND ROASTED
Roasted is our ongoing experiment in answering a simple question: How much can roasting alone change a coffee?
Instead of changing the origin, processing method or producer, we keep the coffee the same and explore what happens when we change only the roast profile. Sometimes the differences are subtle. Sometimes they're surprisingly dramatic.
Each Roasted release is the result of countless production batches, cuppings and conversations around the table. Some profiles stay behind in the workshop. Others earn a place on the shelf.
If you've ever wanted to peek inside Beau's brain during a roast, this one's for you.
Beau's latest experiment focused on one of the Stronghold S9X's biggest strengths: independently controlling multiple heat sources.
Unlike a conventional gas drum roaster, where heat is primarily managed through the burner and airflow, the Stronghold lets him independently adjust hot air, halogen heat and drum temperature throughout the roast.
For Roasted 3.0, Beau experimented with a high drum temperature and high halogen heat at the beginning of the roast before gradually reducing that initial energy as the roast progressed.
Those small changes were enough to reveal a cleaner, juicier and sweeter expression of the very same coffee.
ABOUT THE LABEL
For the first time, a Roasted label comes directly from Beau's creative process. While refining roast profiles, Beau often gives coffees their own visual identity to make long tasting sessions a little more memorable.
For this release, he turned to the 1990 film Ghost, assigning different stills of Patrick Swayze, Demi Moore, Whoopi Goldberg and Tony Goldwyn to each coffee. No hidden meaning. No tasting code. Just Beau having fun and hoping it gives people a giggle.
He probably thought Patrick Swayze's portrait from Ghost would end up collecting dust on a shelf in the roastery. The marketing department had other plans. We stole it and turned it into the official label for Roasted 3.0.
