We brought in an incredibly limited nano-lot of this coffee for a singular, vital purpose: $5 from every tin can or bundle sold (click here to see the collab with Zamalek Montreal) will go directly to support our dear friend Hamza and his family in Palestine. This is the very first time we have ever put an infused coffee on our menu. It is a unique Pink Bourbon lot that undergoes a meticulous co-fermentation processed with real, natural watermelon fruit completely free of synthetic flavourings or cheap chemicals. It comes from a husband & wife team - two agronomists -Sebastián Velásquez López and Eliana Gómez Correa, who run their farm, La Cumparsita. They built the estate from scratch, combining their scientific backgrounds to push the boundaries of clean processing without synthetic chemicals. While Sebastián manages precision in the fields alongside his work as a Q-Grader, Eliana brings her own agronomy expertise directly into their fermentation architecture and sensory design. Together, they map out these complex, fruit-infused co-fermentations, tracking every step from the first cherry pick down to the final roasted batch on our menu.

Beyond the technical craft, we chose it because of what the 🍉 watermelon represents: the fruit of resistance. Following the 1967 Six-Day War, when the public display of the Palestinian flag was banned in the West Bank and Gaza, the watermelon became a vital symbol of Palestinian resistance. 

Because this micro-batch is so small, it is available strictly as a limited-run collector’s tin. There are no refills, and there are no large bags.
