We brought in an incredibly limited nano-lot of this coffee for a singular, vital purpose: $5 from every tin can or bundle sold (click here to see the collab with Zamalek Montreal) will go directly to support our dear friend Hamza and his family in Palestine. Donations have slowed down a lot recently, and they still need our support. If you’re able to donate or simply share his campaign, it would mean so much to him and his family.

This is the very first time we have ever put an infused coffee on our menu. It is a unique Pink Bourbon lot that undergoes a meticulous co-fermentation processed with real, natural watermelon fruit completely free of synthetic flavourings or cheap chemicals. It comes from a husband & wife team - two agronomists -Sebastián Velásquez López and Eliana Gómez Correa, who run their farm, La Cumparsita. They built the estate from scratch, combining their scientific backgrounds to push the boundaries of clean processing without synthetic chemicals. While Sebastián manages precision in the fields alongside his work as a Q-Grader, Eliana brings her own agronomy expertise directly into their fermentation architecture and sensory design. Together, they map out these complex, fruit-infused co-fermentations, tracking every step from the first cherry pick down to the final roasted batch on our menu.

Beyond the technical craft, we chose it because of what the 🍉 watermelon represents: the fruit of resistance. Following the 1967 Six-Day War, when the public display of the Palestinian flag was banned in the West Bank and Gaza, the watermelon became a vital symbol of Palestinian resistance.

Because this micro-batch is so small, it is available strictly as a limited-run collector’s tin. There are no refills, and there are no large bags.

A completely clean, vibrant cup that entirely redefines what a decaf can be. The fruit infusion doesn't feel artificial at all; instead, it delivers an incredibly natural profile of crisp watermelon, juicy honeydew, and sweet pomelo, backed by a warm brown sugar sweetness and a nostalgic vanilla cola finish.

HOW PROCESSING IMPACTS FLAVOUR
Sebastián & Eliana co-ferment the coffee in airtight tanks with real, caramelized watermelon for 35 hours, letting the fruit sugars deeply penetrate the beans. After a slow 12-day drying phase and a month of resting, the coffee is naturally decaffeinated using a gentle sugarcane process.

This careful journey is why the vibrant watermelon and honeydew notes blend so seamlessly into the cup - keeping the natural fruit acids perfectly crisp and ending with that sweet, nostalgic vanilla cola finish.

Why are the FOB and Farmgate identical? It's because the farmers set the price, and are also the ones exporting.
So many smallholders are forced to sell cherries or parchment, leaving a lot of what the industry consider ''plus value'' in the hands of those not producing coffee. By processing and exporting themselves, Sebastian and Eliana ensure they get the price they want, and deserve, for their hard work.

The importer also set 1,25CAD/kg that goes directly into community projects with smallholders in Colombia. They do not do this only for this lot, but for all the coffees they buy and sell.

REUSING YOUR TIN

♻ Designed as a collector's item or to be reused, your tin was made to stick around long after the coffee is gone.

CARE INTRUCTIONS
♡ To keep it in good condition, store it in a cool, dry place away from direct sunlight and heat sources. When needed, wipe the inside and outside with a damp cloth rather than soaking it in water. We recommend avoiding full submersion and dishwasher use, as both can lead to rust over time.

Allow the tin to dry completely before reuse, paying special attention to the lid, rolled edges and sealing components where moisture can accumulate.

⚠ Do not remove, puncture or tamper with the one-way degassing valve located on the top of the tin. The valve helps release excess gas from freshly roasted coffee while limiting oxygen exposure.

○ Under the screw-top lid, you will find a silicone freshness seal. Please do not remove or modify it. Keep it clean and dry, and ensure it is properly seated after each use to help maintain freshness and prevent unwanted moisture from entering the tin.

⚠ For the best coffee quality, avoid storing the tin in the refrigerator or freezer. Temperature changes can create condensation inside the container, which may affect both the coffee and the tin over time.
