A coffee for the curious.
We keep exploring and testing everything about our new roaster. Even though we think our coffees are better than ever at the moment, we are just too curious and we always have the urge to see how we can improve or learn.
One component of the Stronghold we have played with a little more lately is the air control. For this test, instead of gradually decreasing heat as the roast progress like a ''normal'' roast, we have been increasing air flow instead, and we do so for the first two thirds of the roast to manage the ambient heat.
This meant a longer roast compared to our normal production of the Guiben.
So how does it taste? Ultimately, you will be the judge of that, but for us, here's how it felt: The Airflow test gave us a profile that is less explosive while providing more nuance, complexity and balance. To achieve such flavour clarity, we have, in the process, sacrificed a little bit of body and mouthfeel.
This is a good experience for us to keep exploring and keep things interested.
