We are very happy to expand our buying within the newly established Semilla network in Mexico.
This is a blend of 3 coffee farmers who joined forces. By blending their coffee together, Fildel, Felimon and Minerva make logistics easier and more efficient, insuring a higher pay.
This coffee is a descendant of the first typica trees that were planted in the 17th century, but due to a unique micro climate and rich volcanic soil, it evolved to what is today known as the Pluma de Hidalgo variety. In Mexico, this is even recognize as an official designation of origin. We know this might sound gimmicky, but any added value, even if symbolic, that could benefit farmers income, is a good thing.
We hope to have this coffee on our menu for years to come.
For having had lots of typica coffee over the years, we can confidently say that this coffee is delicious and different.
BREW CHART & IMPRESSIONS
OUR IMPRESSIONS
What a joy to drink this coffee! The Pluma cultivar, since it's from the typica coffee family, is a familiar yet special brew.
We chose a 3/5 roast degree for this one because we felt this is what would offer the boldest sweetness and would make it easier to dial in both for filter and espresso; the perfect omni roast!
This coffee screams of toffee. It has a heavy mouthfeel and the sugars linger forever. The fruits were also very interesting and all purple, think figs, plums, and blueberries (ok blueberries might not be purple but you know what we mean 😜 ) The finish is quite nutty, like sweet almonds. Just an overall amazing brew that could very well be your daily driver.
HOW PROCESSING IMPACTS FLAVOUR
And for all the people interested in processing at the farm level, here's how this coffee was expertly handled before reaching us:
''Ripe cherries are harvested and undergo an initial anaerobic fermentation for 24 to 48 hours in plastic buckets or sealed bags. The cherries are then floated and depulped for a second fermentation of approximately 12 hours. They are dried on sieves in the shade or on sunny patios for a few days. Complete drying takes between 4 and 8 days.''
